As you will gather, in order for a recipe to make it to this link, it MUST be extremely easy to prepare and taste good. Here are 2 I used over the Holidays - 1 for a church pot luck, and 1 for a more formal dinner.

This first one is actually called "Casserole". That's what my mom called it all the years I was growing up. It wasn't until I was cooking for my family, that I learned that the word casserole is a catch all description of dishes with combined ingredients. I just thought it was the name of this one dish! It's great for potlucks, and although it sounds really weird, it's best when the flavors blend a bit as it sits on the pot luck table. So here you go…

Casserole - serves 6 or so

Ingredients:
1 lb. ground beef
1 - 15oz size can of pork and beans (I like Campbell's brand best)
1 - 15oz size can of kidney beans
1 - 15oz size can or jar of prepared spaghetti in just tomato sauce (try not to get the kind that has cheese in the sauce unless that's all you can find.)
About 2 tsp. Oregano

In a very large skillet, brown the ground beef. Drain off the fat. Open all the cans and empty them into the skillet, liquid and all. Sprinkle in the oregano and stir it up. Simmer it on lower heat until heated through and you're ready to serve. It can sit on the stove for a while if need be. Can be served with a salad and breadsticks.


Salmon in wine - 1 piece of salmon for each serving. Quantities below are for 4.

Ingredients:
1 piece of salmon filet for each person
½ C white wine
2 T. lemon juice
Butter or margarine
Dill weed (I prefer fresh dill if available)

Preheat oven to 375 degrees. In a shallow baking dish (not a lot larger than the space the salmon takes up in it) place all the salmon pieces. Dot the tops of each with butter or margarine. Drizzle on the lemon juice. Add the wine. Sprinkle dill weed on top to your taste. Cover dish and cook for about 15 or 20 minutes. Keep an eye on the salmon and test it occasionally to your desired doneness since this varies. This is a really easy dish, tastes great, and impresses people at a good dinner!
